GREEN GNOCCHI AL PESTO


INGREDIENTS:


8 potatoes

4 spoons of fresh pesto sauce

4 cups of white flour

2 eggs

2 cups parmesan

salt, pepper


to dress the gnocchi

butter and parmesan cheese.


This is a different way of preparing hand made gnocchi, which is very tasty due to the

pesto sauce added to the potatoes but lets go to prepare our gnocchi. First peel the potatoes and boil them in hot water with salt, once ready press them with press potatoes spoon and add the pesto sauce the flour,two eggs mixed parmesan cheese salt and pepper and mix

everything together with a fork, add flour if the mixture is not well blended.Work with your hands and add some more flour on the table where you can cut the gnocchi. Do some rolls

with your hands and cut them with a small knife in small pieces like gnocchi are.

Boil water with salt and add the gnocchi for 3 minutes as they begin to float take them out

and finally place the gnocchi in a bowl and add the dressing of fried butter and parmesan cheese. BUON APPETITO!


With this plate I will suggest a white wine, dry to be served cool.
